Favorite Chocolate Fudge Cake
Everyone loves chocolate, specially my grandpa Raymond so what a great idea to prepare the ultimete favorite Chocolate Fudge cake that everyone loves including grandpa for those special parties.
6 oz. unsweetened chocolate
6 Tbsp. strong-brewed coffee
1 Tbsp. pure vanilla extract
3/4 pound (3 sticks) butter at room temp.
1 pound dark brown sugar
1 c. granulated sugar
6 large eggs
1 c. sifted all-purpose flour
Confectioner's sugar for decorating
1 c. heavy cream, whipped (optional)
Adjust th rack to the center of the over. Butter a 10-inch springform pan. Preheat the oven to 350 degrees. In a double boiler, over simmering water, melt the chocolate with the coffee. Remove from heat. When slightly cool, stir in the vanilla. (The melted chocolate and coffee may form a thick paste, but it incorporates easily into the batter when added.) In the large bowl of an electric mixer, cream the butter with the brown and white sugars until light and fluffy. Separate the eggs carefully, placing the whites in a large bowl. Add the egg yolks one at a time to the butter-sugar mixture, beating well after each addition. Add the chocolate mixture to the batter and mix well. Stir in the flour, mixing only until incorporated. Using clean, dry beaters, beat the egg whites until stiff and glossy but not dry. Gently fold the beaten egg whites into the chocolate mixture, handling them carefully in order not to deflate the egg whites. Fold only until no white streaks remain. Gently turn the batter into the prepared springform pan. Smooth the top with a spatula. Place in the preheated oven, and bake for one hour or until the top springs back when lightly touched. Remove the pan from the oven and cover the top of the cake with aluminum foil to keep it from hardening. Place the pan on a rack to cool. When completely cool, store covered in the baking pan until ready to serve. A plastic bag, tightly closed provides excellent storage. *Do not refrigerate!* At serving time, remove the sides of the springform pan and place the cake on a 12-inch cake platter. Dust the top lightly with confectioners' sugar. (For a nice effect, you can place a lace doily or stencil on top of the cake and then dust with the sugar over that. Carefully remove the doily or stencil and voila! instant masterpiece!) Top each portion with a dollop of cream.
Everyone will be delighted and will enjoy this fabulous dessert that I am sharing here, just as grandpa did. Grandpa was extremely thankful and always ask if we can make him some more.

| 100th BIRTHDAY ALCOHOL-METER: When you are in the close company suggest 2 slightly tight men to get to know who of them is tighter. Give a felt-tip-pen to each of the players. Put "a scale" with the grades 20o, 30o, 40o etc behind them. The scale is drawn on the large piece of thick paper. The object is to mark the grades on the scale. 100th Birthday MENU IDEAS |

A 100th Birthday feast takes planning and preparation. The century mark is more than an individual birthday. In many cases it is the long awaited chance for as many as five or more generations to gather for a family reunion/birthday party. It follows that the menu be a once in a century table of favorites.
Keep in mind when planning that the ages of guests may vary from the 80-year-old children to the eight-year-old great-great-great grand children of the guest of honor. Special diets for diabetics and persons with high blood pressure need to be considered on the far end of that continuum. Vegan and vegetarian as well as religious restrictions may need to be addressed among this large gathering. And finally, there may be young people who will not eat anything that isn't ordered from a drive through window and magically appears in a kid friendly box.
Why not think of these different concerns as three different buffet tables or at least different sections of the same table. This will help with traffic flow. On the far end include stuffed cabbage rolls or other appropriate ethnic foods; the middle section should contain low sodium deli sandwiches, cut up raw vegetables and an unsweetened fruit bowl while the final table section should have hamburgers or sloppy Joes with French fries served on paper party goods. Perhaps a selection of small fast food type toys could be included in a ""take one each"" basket. This will help entertain children.
There are infinite sources for recipes for family favorites. One possible variant on cabbage rolls, for instance, is the addition of sauerkraut in the bottom of the pan. This is far less sour than it sounds. After cooking it just adds a zip of flavor.
