Fiesta Menus are always fun but can be an elegant 25th Birthday menu as well as a fun one. Mexican cooking goes far beyond the simple items found in most Americanized restaurants. The party for a 25-year-old can incorporate many complicated dishes or simpler fare. Let the guest list and level of formality determine the kinds of menu items to be served.
If the party is to be a casual one then it makes sense to serve tacos, burritos, refried beans and Spanish rice. If the party is to be a formal dinner party then find a good cook book. For an easy to serve dinner party that tends toward the casual try serving enchiladas in a in large aluminum pans or glass baking dishes. Beef or cheese--maybe a pan of each--with a full selection of chopped vegetables and sour cream would be a more complete meal without going to great effort. Separate bowls of chopped green onions, tomatoes, and shredded lettuce can be prepared and served side by side with tortilla chips and salsa.
Easier still is this corn tortilla chip enchilada casserole. Use a bag of purchased chips. Follow package directions to prepare a packet of enchilada sauce. These are usually simmered with an eight once can of tomato sauce and 1-1/2 cans of water. Layer in a two quart casserole dish with cheddar cheese or a mixture of Monterey jack and cheddar. Bake at 350-degrees for about twenty minutes. Top with sliced black olives if desired.
Serve with a punch bowl filled with equal amounts of citrus soda pop and tropical punch. Drape grapes over the edge of the bowl for a non-alcoholic sangria. Make skewers of fruit chunks for paper cups themed for the fiesta.
