Beer and Brazilian Chicken Baked in Beer. This is a wonderful chicken recipe that adults love. This recipe usually surprises them because its just different and very unique not many know about it, my friends were all amazed when I introduced it to them, I enjoy it very much and so does my husband its great for anniversary dinners and big extravagant parties, try it serves 4
2 2.5 lb chickens (or equiv pieces) trimmed of fat, excess skin
2 bottles dark lager (appx)
1 onion
1 T chopped garlic
2 t dried oregano
2 t dried tarragon
1.5 t dried basil
2.5 t paprika
0.25 t black or white pepper
0.25 t crushed red pepper
salt
put chicken pieces skin side down in baking dish,
pour in enough lager to just cover the chicken.
slice the onion, lay over chicken pieces,
sprinkle with herbs & spices
marinate 2 hrs room temp (overnight in refrigerator +
1/2 hr to come to room temp)
bake 400 deg, preheated oven for 2 hours,
drain and reduce the sauce to form a glaze.
Serve with:
collard greens shredded and sauteed in olive oil & garlic
rice cooked with 1/4 t saffron threads

| SPEAR THE BEER PARTY GAME: Do it in an open field (maybe a park nearby) or backyard where there is ample room. Contact your local armory or SCA for loaner spears, or make one yourself from a guide on the Internet. Inform all participants that they are NOT to let go of the spear; the cheap canned beer is thrown towards them (lobbed, like in slow-pitch) and participants are to spear it from there, without losing their grip. When people think of beer party, they believe that drinking is the only way to celebrate beer. This, however, is not the case. Next time you are putting together a menu for a party, make sure that every dish has a secret ingredient…beer!
To start a beer sampling meal off, serve a Wisconsin Cheese Beer Soup. This soup is a creamy indulgent mixture of cheese and beer that will delight any soup lover. For an added kick, add a splash of beer atop each serving of soup.
To make this soup you will need: 12 ounces beer (nothing too dark, Miller Lite works pretty good), 8 slices bacon (about 1/2 pound), 1/2 cup diced onion,
1/2 cup finely chopped carrot, 1/2 cup minced celery, 1/4 cup minced sweet red pepper, 1 10-1/2 ounce can condensed chicken broth, 1/4 cup flour, 1 cup Half and Half Coffee Creamer, 3 cups shredded sharp (medium is OK) cheddar cheese, 1 tablespoon sugar and salt and pepper to taste. Open beer and let stand while dicing vegetables. Sauté bacon until crisp. Drain and crumble. In large soup kettle, sauté vegetables in two tablespoons of bacon grease until soft. Add chicken broth. Fill chicken can with beer and add to mixture. Bring to a boil, and then reduce heat to low. Pour remaining beer into a small mixing bowl and whisk in flour. Gradually add to broth, stirring constantly, till thick. Add half and half, bacon and cheese. Heat until cheese melts. Stir in sugar. Add salt and pepper to taste.
Round out the menu by serving beer boiled brats and beer bread pudding. Serve a variety of beers or even have a sampling of beers from micro or imported breweries. This makes a great theme for the Oktoberfest By just adding even one simple food item to the menu will help create
a complete Beer theme party feeling. |
