For the cheerleading team you will need some great homemade cheerleading cookies. Try a basic cookie dough recipe and top it with coconut shreds dyed with various food colorings, to give the impression of pom-poms. You might even add some glittery sugar to them, not only for taste but for decoration, as well.
Here is a simple cookie recipe for your homemade cheerleading cookies. You will need two cups of butter, one cup of packed light brown sugar, ½ cup of white granulated sugar, two large eggs, 2 teaspoons of vanilla extract, and 4 ½ cups of flour. In a large bowl, beat all the ingredients, except for the flour, with an electric mixer on medium speed. When all these ingredients are mixed in well, then gradually add the flour. Take half the dough out of the mixer roll it into a ball, and flatten it slightly. Do this with the other half, as well, then wrap them both separately in plastic wrap and refrigerate them for about an hour so that they can set.
To make your homemade cheerleading cookies special, you can then mix ¼ teaspoon ground cardamom, and 8 small finely chopped dried apricots into the dough. Roll out the dough into an 8-inch log and slice it into 16 pieces. Do the same for the other half of the refrigerated dough, too. Roll the pieces into balls, put them on an ungreased cookie sheet, about one inch apart, and bake them in a preheated oven of 350 degrees for 12 to 14 minutes. Then, while they are still soft, sprinkle on the colored shredded coconut. And there you have your cheerleading pom-pom cookies!
