Chinese New Year's Sour Cream Rolls

Chinese New Years Sour Cream Rolls are so creamy and delicious you need to try them. My friend made them for our pot luck at work and everyone just kept talking about how great they were, so I needed to get that recipe

. /4 cup water, warm (105 to 110 degrees) 1/4 cup margarine
1 cup sour cream or plain yogurt (my fav)
3 cup flour
1 pkg active dry yeast
2 tbls sugar
1 tsp salt
1 egg
Instructions:

Put in a small pan 1/4 cup water, warm (105 to 110 degrees) and 1/4 cup margarine. Heat to melt margarine but do not boil, then add 1 cup sour cream or plain yogurt (my fav).

Heat until quite warm (110-120 degrees)

In a bowl mix together: 1 cup flour, 1 pkg active dry yeast, 2 tbls sugar and 1 tsp salt.

Mix thoroughly - then pour liquid over and beat vigorously by hand or electric mixer.

Add 1 egg and beat again vigorously. While beating add up to 2 cups flour or until you get a dough stiff enough to handle. (dough should be soft, but no longer sticky--smooth as a babys' behind). Flour picks up moisture from the air, so the day you make bread, the amount of flour could vary quite a bit. Just add sprinkles" of flour toward the end and knead until the dough is no longer sticky and feels silky smooth.

Oil top of dough, cover bowl with plastic wrap and proof till nearly double (about 50 minutes to an hour).

Place dough on a floured board and pat out to about 1/2 thick and cut and shape as you wish. Let rise 15-30 minutes.

Bake at 375 degrees about 20 minutes. Butter the tops when they come out.

Note:

These can be turned in to "brown and serve" rolls and frozen and are great when you just need "one or two" rolls. Just bake until barely "ivory" in color cool and freeze. When you want to serve later, place in a pre-heated oven and bake till nicely browned.)

Some items you may find during Chinese New Year are a vegetarian dish called jai, whole fish, chicken, nian gao, rice pudding, and man tou. The menu items have more meaning than most foods available at a traditional New Year in the United States. The Chinese believe their food symbolizes many things. Among the symbolization of food is the attitude that the amount of food prepared shows abundance and wealth for the household.

Spring rolls are another traditional and symbolic food you may find on the menu for Chinese New Year. To make spring rolls you need 1 cup shredded cabbage, ¼ cup shredded carrots, 2 tablespoons oyster sauce, 4 Chinese garlic chives, 1 cup bean sprouts, ½ bell pepper, ¼ pound pork, 1 teaspoon chopped ginger, 1 teaspoon chopped garlic, and a pinch cornstarch to create 24 spring rolls. You will also need 24 wrappers.

Other menu items you may find at a traditional Chinese New Year celebration include lettuce wraps, Lion’s Head Meatballs, Pecking Duck, Sweet & Sour Pork, and Tea Eggs. It is important to note that most of the menu items will have some significance to their culture and that is why it is made on the Chinese New Year. Rice pudding is considered a dessert among the Chinese and will complete the meal for you and your friends.

BUSES, TRAMS, TROLLEYS: Divide up into 2 teams (6 players in each one). Choose 3 persons for a jury. The teams number off. Each player must remember his/her number. The players form up 2 lines in file. The distance between the lines is 6-8 steps. Between the lines there stand 3 chairs. The first chair is "a bus", the second - is "a tram", the third - is "a trolley-bus". The instructor starts speaking: "It's early, early morning. All the people are hurrying to work. There are many people at the bus-stops. Now in the distance I see … I see… What do I see … Well, it's number 3 bus." His/her words the instructor pronounces quickly. Both numbers "3" must take place on the first chair. The player who takes the place the first brings a point to his/her team. Numbers "3" return to their places. The instructor continues: "There were so many people at the bus stop, that only 2 people managed to take the bus. (The instructor marks out the words "two" and "bus".)
