The perfect dessert for a clambake would be a homemade clambake party cookie. Try refrigerator ginger cookies on your guests, and you won’t be sorry. They will ask for more. But note that this recipe should be started a day ahead of time, as the dough needs to chill for 24 hours.
First you will need just a few ingredients for your homemade clambake party cookie. These ingredients are one cup of shortening, one cup of sugar, one cup of molasses, one egg, 5 ½ cups of flour, ½ teaspoon of baking soda, 2 teaspoons of baking powder, and a tablespoon of ginger. You will need to blend the shortening, sugar and molasses together until they are smooth. Add the egg and mix it all in well. Sift the flour and measure and sift with other dry ingredients, and mix them all together. Then add the dry ingredients to the first mixture. Chill this dough in the refrigerator for about a half hour. Then form the dough into rolls, which will later be sliced into cookies. Wrap each roll in waxed paper, and allow it to chill again in the refrigerator, this time for 24 hours.
After your dough is thorough chilled, your homemade clambake party cookies are ready to be sliced. Unwrap the rolls from the wax paper, and slice them 1/8 inch in thickness. Place them on a greased cookie sheet or a cookie sheet lined with parchment paper, and bake them at 400 degrees for 10 to 12 minutes. |
