COOKIES

Sugar cookies are easy to make, and they have many variations, so try an assortment of different ones for your homemade congratulations party cookies.
Starting with the basic sugar cookie, you will need 2/3 of a cup of shortening, 1 ¼ cups of sugar, 2 eggs, 3 cups of flour, 1 ½ teaspoons of salt, 2 teaspoons of baking powder, the grated rind of one orange, and one tablespoon of orange juice. Cream the shortening, sugar, and eggs together until they are light and a bit foamy. Then sift the flour, salt and baking powder and add this dry mixture to the creamy mixture. Next you will need to add the orange rind and juice. Mix this all together until it is smooth. Then it will need to be chilled. Chill it in the refrigerator for at least an hour.
Now you are ready to bake your homemade congratulations party cookies. Roll out the dough to about ¼ inch thickness, on a slightly floured board. Cut the dough with a cookie cutter. You might want to use stars, as this is a congratulations party. Sprinkle them with colored sugar and bake in a moderate oven of 350 degrees about 12 to 15 minutes to make about 60 cookies.
As mentioned, there are many variations to your homemade congratulations party sugar cookie, such as almond cookies. Just substitute one teaspoon of vanilla for the orange rind and juice. Then, after the cookies are cut, brush them with egg and dip in chopped almonds. For butter cookies, use butter instead of shortening, and substitute one teaspoon vanilla for the orange rind and juice. And to make them chocolate, just add ½ cup of cocoa, mixed with 3 tablespoons of hot water, and substitute one teaspoon of vanilla for the orange rind and juice.
