First Communion is a very special day in the life of a young Christian. First communion is the day that a young Christian is first allowed to partake in the ceremony of Communion. Often, relatives from around the country come to see this coming of age. With so many friends and family in town for the ceremony, why not throw a First communion party afterwards? And what does any good first Communion party need? Why, a First Communion menu of course!
The First Communion theme should focus on the purity that one associates with the ceremony of Communion. Decorations could be white and silver or gold. When it comes to the First Communion menu, dishes one would normally serve on Easter are certainly appropriate. Start things off with a hearty dip, such as a spinach-artichoke or crab dip accompanied by crackers. For a main course, nothing could be better than a nice leg of lamb with traditional mint jelly. For dessert, a simple cake can be tailored to the occasion by fashioning the cake into the shape of a cross.
To make the traditional mint jelly for your Holy Communion leg of lamb. Start with four pounds of tart apples, chopped into large pieces in two cups of water. Add 1 ½ cup of freshly chopped mint and bring to a boil. Reduce heat and simmer for 20 minutes until apple pieces are tender. Add 2 cups white vinegar, bring to a boil again. Cover and simmer for five minutes. Mash apples to an applesauce consistency. Place mashed apples into cheesecloth, suspended over a bowl. Allow to drain for several hours. Pour juice into a pot and add 7/8 cup of sugar for each cup of juice. Slowly bring this mixture to a boil and cook for ten to fifteen minutes. Pour into a clean jar, seal and allow cooling.
