Start up your hippies party with an extensive salad Brunch. The salad bar was quite popular in the seventies and it’s a great way to promote that healthy natural lifestyle the hippies were all about. Make up your own granola for the dessert or just something for the guests to snack on at the party. Swiss Chard is a classic healthful food for the hippies party. You can make up a Frittata with it. The guests will get a kick out of fondue with gherkins, bread and meat.
Swiss Chard Frittata
For this healthy hippies dish you’ll need the following ingredients: 1 lb Swiss chard, 4 garlic cloves, minced, 1 cup chopped onions, 2 teaspoons olive oil, 6 egg whites, 2 whole eggs, 3 tablespoons chopped fresh basil, 1/4 teaspoon salt, 1/4 teaspoon black pepper , and 1 medium tomato, sliced.
Chop of the Swiss Chard. Sauté garlic and onions in a tablespoon of oil. Add the chard to the garlic and onion in the saucepan. Cover the pan and lower the heat on the oven. Cook the mixture for about 10 minutes. Remove from heat and drain excess liquid from the saucepan. Crack eggs into a large bowl and beat with pepper and salt until mixed. Stir in the cooked chard mixture. Coat the bottom of the skillet with oil. Heat up on medium heat. When the oil is hot pour the eggs into the pan. Arrange tomato slices on top. Cover the pan and cook until the edges are down and the bottom of the egg is golden brown. Flip over the frittata and cook the top for 5 minutes.
