Let the Countdown Begin with Rum Balls.What is Christmas or New Years without the little extras like these Rum Balls, for our family reunions we always make something very special to eat as well as to drinks, this year my brother came up with this recipe and everyone just loved him for it, its so much fun and they are breath taking, Enjoy I usually make it during
the first week of December to give it enough time to cure. I do mail
some out to friends in a tin, therefore I usually double or triple this
recipe:
2 Tablespoons cocoa
Confectioner's sugar
2 1/2 Cups finely crushed vanilla wafers (most of a 12-oz box), easily
crushed in a food processor or blender
1 Cup finely chopped pecans or walnuts
3 Tablespoons light corn syrup
1/4 Cup rum or bourbon
Into a large bowl, sift the cocoa and 1 Cup of confectioner's sugar. Mix
in remaining ingredients. Form the mixture into 1-inch balls with your
hands. Sprinkle about 1 Cup confectioner's sugar on a plate and roll the
balls in it to coat. Store in a tin for at least 1 week before giving
them away. These cookies will mellow with age and will keep up to 1 month.
They can also be wrapped in plastic wrap or foil, but this is very time
consuming. Makes about 36.

| COUNTDOWN CHINESE WHISPERS: For a 50th or 60th birthday party for somebody with a good sense of humor (and friends with a similarly good sense of humor it can be fun to include games that play on the weaknesses that people suffer as they age. Chinese whispers is a perfect one to do just that. All guests sit in a long line and the person at one end should whisper a fairly long sentence in the ear of the next person who then repeats this with the person to him or her and so on. The person at the other end speaks the saying out loud. Use a quotation about old age, something like: ‘And in the end, it’s not the years in your life that count. Each winter, after the children’s Christmas presents have all been unwrapped and the Menorah has been put away, there’s a chance for adults and parents to party. New Year's Eve is a great time to catch up with friends, blow off some of the stress the holidays can cause and just have a great time. In fact, many look forward to New Year’s Eve all through the year. So, why not make your next New Year’s Eve party theme “Let the Countdown Begin”?
Start your planning off with some Let the Countdown Begin invitations to ensure your guests keep the date open. The evening of the party, you’ll need plenty of snacks and hors d’ouerves to keep guests happy. A fun way to do this and integrate your Let the Countdown Begin theme is to bring out a new item every hour leading up to the big champagne toast at midnight.
You can Let the Countdown Begin by serving up a full menu comprised of bite sized snacks and drinks like ten o’clock shadow cupcakes, 11 o’clock martinis and 12 o’clock resolution bagel pizzas.
To make ten o’clock shadow cupcakes for your Let the Countdown Begin party gather six eggs, separated (separate when cold, allow to come to room temp) 3/4 teaspoon cream of tartar, one cup sugar, divided, three tablespoons water, room temp, one teaspoon vanilla, 1/8 teaspoon salt and one cup sifted all purpose flour. Also for the espresso syrup you’ll need ½ cup confectioners’ sugar, 2/3 cup water and five teaspoons espresso powder. Finally you’ll need three cups mascarpone, one cup confectioners’ sugar ¼ cup marsala wine, and ¾ cup heavy cream chilled. In large mixing bowl at high speed, beat egg whites with cream of tartar until foamy. Add half of the sugar, 2 tablespoons at a time, beating constantly until sugar is dissolved and whites are glossy and stand in soft peaks. Rub just a bit of meringue between thumb and forefinger to feel if sugar has dissolved. In small mixing bowl at high speed, beat egg yolks until thick and lemon-colored, about 3 to 5 minutes. Gradually beat in remaining sugar, water, vanilla and salt (if desired) until blended. With a sifter or sprinkle flour with a sieve over whites. Add beaten yolk mixture. Gently, but thoroughly, fold yolk mixture and flour into whites. Fill muffin cups 2/3 full. Bake in a preheated oven at 350 degrees for 10-15 min or until done.
To make the espresso syrup for the cupcakes at the Let the Countdown Begin party take a small, heavy saucepan over high heat, combine the water, the remaining 1/2 cup confectioner’s sugar and the espresso or coffee powder. Bring to a boil, stirring occasionally. Remove from heat and let cool. Use a fork to poke a few holes into cupcakes so that they will absorb liquid. Pour approximately ½-1 teaspoon of syrup onto each cupcake.
Finally the you’ll need to make the frosting for the cupcakes at the Let the Countdown Begin party. In a medium bowl using an electric mixer set on medium speed, beat together the mascarpone cheese, confectioner’s sugar and marsala until well blended. Add the cream and beat until fluffy, about 1 minute. Frost cupcakes with mascarpone/whipped cream mixture. Dust tops with cocoa powder (I used unsweetened) and then sprinkle with dark chocolate shavings.
These cupcakes are sure to be a hit at your Let the Countdown Begin party. By just adding even one simple food item to the menu will help create
a complete Let the Countdown Begin theme party feeling. |
