To create a great crème fraiche for your medieval menu, start with one cup of heavy whipping cream. Slowly bring the cream to around 105 degrees Fahrenheit in a medium saucepan. Remove from heat and stir in 1 tablespoon of buttermilk. Pour mixture into a large bowl and allow to stand in a warm place, covered by plastic wrap until thickened but still pourable. This process takes 24-36 hours. Stir and taste every 6-8 hours. The crème fraiche is ready when thick and has a slightly sour taste. Chill for several hours before serving. Crème fraiche can be kept in the refrigerator for up to 10 days before the party.
