Homemade cookies for Passover are a tried and true tradition that has been passed down for centuries. One of the most common of these would be the Passover Chocolate Pecan Cookies. These delicious nutty sandwich cookies are filled with chocolate and after one bite one will find that they will want to make them year round. While you are making these great cookies one can set their child at the table with coloring sheets to keep them entertained.
To make these great homemade cookies one will need; 1 C sugar, 2 sticks butter softened, 4 TBSP shortening, 2 C pecans, ½ tsp. vanilla, 6 oz. bitter chocolate, 4 egg whites, 6 TBSP potato Starch, 6 TBSP matzoh cake meal.
To begin creating these delicious homemade cookies preheat your oven to 350 and position your oven racks to the middle and lower shelves of the oven. Next, take two cookie sheets and line them with parchment paper.
The next step in creating these homemade cookies would be to place the butter into a mixing bowl and beat with a mixer until it is light and cream. Now gently add the nut mix and vanilla and beat till well mixed. Add the egg whites and beat until it is fluffy which will take 2-3 minutes. Take the cake meal and sift together with the potato starch and then stir into the batter until well combined.
The next step in creating these great homemade cookies would be to lightly wet your hands. Take rounded teaspoons of the dough and roll them between your fingers and place them onto the cookie sheet about 2 inches apart. Take a place the sheet in the middle of the oven and bake for about 15-20 min or until they are golden brown. By using a spatula carefully transfer the baked cookies to a cooling rack and allow them to completely cool.
While your homemade cookies are cooling take the chocolate and shortening and melt them in a double boiler. Be sure to stir occasionally until it is melted and smooth. Take the flat side of each cookie and spread a thin layer of melted chocolate across it. Top with flat side of another cookie. Continue until all of the delicious cookies are filled. Finally, eat and enjoy.
