Although Presidents day is not an official holiday it still means a day off for many and a chance to make some great homemade cookies. Cookies along with coloring sheets are a great way for teachers to teach their students of the great presidents throughout history. Why not create Lincolns favorite cookie the gingerbread cookie for the next Presidents celebration.
To begin creating these homemade cookies assemble the following ingredients; 3 C flour, 1 ½ tsp. baking powder, ¾ tsp. baking soda, ¼ tsp. salt, 1 TBSP ground ginger, 1 ¾ cinnamon, 6 TBSP butter, ¾ C brown sugar (dark works best), 1 egg, ½ C molasses, 2 tsp. vanilla, and 1 tsp. finely grated lemon zest.
To begin the assembly of the homemade cookies take the flour, baking powder, baking soda, salt, ginger, cloves, and cinnamon and whisk together until they are well blended. In a larger bowl take the butter, brown sugar, and egg and beat on medium speed until well combined. Next add the molasses, vanilla, and lemon and continue to mix until well combined. Then carefully mix in the flour mix until the dough is smooth.
The next step in creating these homemade cookie delights would be to divide the dough in half and take each piece and wrap in plastic and allow standing at room temperature. One can also store this dough in the refrigerator up to four days.
While the dough of the homemade cookies is resting take and grease the cookie sheets. Then, take 1 portion of the dough and lay it out on a floured surface. Take additional flour and sprinkle over the dough and rolling pin and roll the dough out until it is ¼ in thick. If need to one can use additional flour to prevent any sticking to the surface or rolling pin.
The final step in creating these homemade cookies would be to cut them out with desired shape and place them 1 ½ in apart on the cookie sheet. Allow them to bake for 7-10 minutes and then remove from oven and allow the cookies to cool enough that they are firm enough to move to a cooling rack. All that is left now is to eat and enjoy.
