Veterans Day Cream of carrot soup
Veterans day cream of carrot soup is a healthy yummy soup to make for the entire family and perhaps all your guests on that next party of yours. I sure do take advantage of the beauty in taste and enjoy it to the fullest, try it
2 lbs. carrots
2 medium potatoes
3 or 4 large onions
1-2 *fists* of garlic (not cloves!)
~1 T dried thyme
~2 t ground coriander seed
~2 t ground ginger root (less if you don't like hot food)
~1/2 t black pepper
~1/2 t ground cardamom
~1 C good red wine
1 C sour cream
salt to taste
Peel and dice the first four ingredients, and put in a large pot.
Yeah, it seems like a whole lot of garlic, but it makes a lot of soup and
it's going to cook for a long time. Add the seasonings, then the wine,
then water until the veggies are completely covered. Bring to a boil and
then slowly simmer, stirring occasionally, for hours. You cannot overcook
it at this point. When you think it's ready, test the largest chunk of
carrot you can find--it should be quite soft.
Strain the soup through a colander, reserving the liquid. Puree
the veggies in a food processor--you'll probably have to do this in
batches. Use a little of the liquid to help it form a smooth puree. Stir
the sour cream into the puree; you may not want to use the whole cup, so
try adding less and tasting it.
Strain the reserved broth into the puree through a fine-meshed
sieve. (The spices will have given up all their flavor by now, and they
make the soup kinda gritty.) Stir it in, and then *carefully* salt it.
Makes lots--probably enough for a first course for 10. Serve
warm. If desired, you can simmer some broccoli florets in the strained
broth while you're pureeing and then throw those in for color and texture
contrast.
Cream of carrot soup is very delicious and can be eaten with just about anything it makes a great side dish try and enjoy the flavor and thickness in texture you will be pretty amazed.

Veterans Day MENU IDEAS |
 |
Veteran's Day celebrates the men and women who enlisted to protect our country. There are many different traditions surrounding menus for Veterans Day. Below you’ll find a few ideas to get your celebration underway:
Crab puffs, dip, chicken for a main dish, BBQ meals, and sandwiches are apart of a typical menu throughout the day. Simple, delicious food that is reasonably easy to prepare is definitely the order of the day.
For crab puffs you will need 1 quart of oil, 1 pound of crab meat, 1 package of cream cheese, 2 teaspoons of garlic salt, and 2 16 ounces packages of won ton wrappers. Heat the oil for frying, then in a bowl mix the crabmeat, cream cheese, and garlic salt together. Place the mixture in the wonton wrappers being careful not to over fill them. Then fry them for 2 to 3 minutes.
A dessert recipe you can prepare the night before (and save time) is a simple trifle. Purchase a plain sponge cake, two flavors of Jell-o crystals, tinned fruit of your choice, custard and cream from the grocery store. Prior to making the trifle, prepare the Jell-o, cut the sponge cake into small squares and whip the cream. Place the cake in the bottom of a serving bowl, topped by the fruit, custard, Jell-o (cut into pieces and mixed together) and finally the whipped cream.
Our veterans have served their life in protecting our country and people. Veterans Day allows us to honor everyone who has served and provide wonderful dishes for friends and family to celebrate those that are enlisted today. However you end up celebrating, it’s important to keep the significance of the day in mind and reflect about the things that really matter in life. By just adding even one simple food item to the menu will help create
a complete Veterans Day theme party feeling. |
