Winnie the Pooh's Moist Lemon Cake
Winnie the Pooh's Moist Lemon cake is fantastic, incredible and amazingly delicious. I made it for Christina's birthday party her first birthday party ever, when she turned one, and it was just a major hit, everyone loved the idea, the cake, the flavor simply everything
8 oz butter
8 oz sugar
8 oz self-rising flour
juice of 2 lemons
3 tablespoons icing sugar
Cream butter and sugar. Add beaten eggs and sifted flour alternately. Turn into an 8 x 8 or 9 x 9 square or round pan. Bake at 400F for 50 minutes.
Boil lemon juice and sugar. Remove cooked cake from oven & immediately pour boiling lemon mixture over. Cool in pan.
Variations -- try different juices -- orange juice, cranberry, pineapple.

In a bowl mix up a half a cup of honey, tablespoon of lemon and a small amount of warm water to thin it out. Wash your carrots and oil the pan you are cooking them in. Dip the carrots in the honey mixture and spread them out on the pan. Pop them into the oven at about 300 degrees Fahrenheit. Coat the carrots with the honey mixture every 10 to 15 minutes with a brush. Cook until they are soft inside. If you prefer them to be a little crispy on the outside turn on the broiler and watch them carefully until they just start to brown on top. Turn off the broiler and remove. Sprinkle lightly with salt and pepper. Serve any remaining honey mix as a drizzle.
